Whole Wheat Buttermilk Pancakes


Whole Wheat Buttermilk Pancakes
2 cups buttermilk
2 eggs
2 Tbsp. oil
2 Tbsp. Honey
1/2 tsp. salt
2 cups wheat flour
1 tsp. baking powder
1 tsp. baking soda
Mix dry ingredients together first.  Make a nest in the middle and add beaten eggs and buttermilk.  Fold together and mix lightly.  Cook on a preheated griddle.  Makes 16 - 20 pancakes.  We like to top these with homemade low sugar strawberry jam and fresh strawberries.  Enjoy!
*note: keep wheat flour fresh by freezing it after you grind it!


My kids love these pancakes.  They always eat at least 2 or 3 each, and they really fill 'em up.  No more asking for snacks one hour after breakfast :)  Even my little one year old can't help but lick the plate when she's done!
